Coconut Milk Vanilla Ice Cream

Tasty treats for your vegetarian, vegan and dairy intolerant friends. I have found that home made ice cream is a treat best reserved for yourself — unless you like being constantly badgered to make it for your friends and family.
The stuff you need:
1 x 400ml can of coconut milk
30g whole wheat flour
55g raw cane sugar
1 teaspoon vanilla essence
What to do with your gathered ingredients:

  • Put coconut milk, flour and sugar into a blender and blend thoroughly
  • Transfer to a saucepan and heat gently until slightly thickened and simmering
  • Remove from heat, cool and chill thoroughly
  • Stir the vanilla essence into the mixture
  • Put mixture into the freezer and stir every 15-20 minutes until frozen

Enjoy your ice cream.
